The Science of Cristalino Filtration
1. Aging First:
Cristalino tequilas start life as añejo or extra añejo, meaning they've been aged in oak barrels for 1–3+ years. This aging infuses them with complex flavors (vanilla, caramel, oak) and a deep amber color.
2. Activated Charcoal Filtration:
After aging, the tequila goes through a filtration process, typically using activated charcoal. This step is what strips out most of the color compounds (called congeners), but retains the flavor molecules—a delicate balance.
How it works: Activated charcoal is highly porous and has a large surface area that adsorbs (not absorbs) unwanted particles—mainly those responsible for color and harsh flavors.
